With 11 hectares in Mercurey, Manu Bautista crafts wines of depth and rare balance, with impressively concentrated, pure fruit. His spot-on choices in ripeness and ageing allow each terroir — from village plots to Premier Crus — to speak with clarity.
Wine The 2023 Red Mercurey Les Chavances impresses with a stunning nose that highlights the elegance of Pinot Noir, featuring delicate floral notes of peony and dried flowers alongside nuanced, complex aromas. On the palate, it is refined and graceful, continuing the fruit-driven profile with ultra-silky tannins. This wine promises excellent aging potential of up to 10 years. A Selection Committee favorite, rated 95/100.
Vinification Hand harvested. 100% de-stemmed, cold vatting for 5 days, then hot vatting for 2 weeks. Aged for 14 months in 228-litre oak barrels, of which 30% are new and 70% are 1 and 2 years old. Production of 2,600 bottles. Made from grapes purchased from 50-year-old vines on 50 ares of clay-limestone soil.
