Hand harvested. 100% de-stemmed, cold vatting for 5 days, then hot vatting for 2 weeks. Aged for 14 months in 228-litre oak barrels, of which 30% are new and 70% are 1 and 2 years old. Production of 2,600 bottles. Made from grapes purchased from 50-year-old vines on 50 ares of clay-limestone soil. |
